Gigantamax Snorlax could have been potentially amazing for Max Battles. After all, it's TANKY AS HECK, has great neutral defensive performance, and has a great fast move for generating energy, can send out very high healing with Max Spirit, and can even do a bit of damage with G-Max Replenish in a pinch. But, again, it could have have been amazing... if it wasn't for the fact that Dynamax Blissey was released before Gigantamax Snorlax. Blissey not only has the same typing and Defense stat as Snorlax, it also has nearly 50% more HP, making it a far superior choice for tanking and healing.
Snorlax is by no means awful - it has a bit more of an offensive presence by dropping the occasional G-Max Replenish (when it has no better option to click). Other Normal Type Pokemon would need at least 244 Attack to drop a Max Strike on a par with Gigantamax Snorlax' G-Max Replenish, so its damage output is at least okay.... even if it can't be Super Effective. However, the trade-off from Dynamax Blissey is extremely steep and hard to justify. Honestly, its best utility is early-game before you've got a good Blissey and as an all-in-one option for low-rank Dynamax Battle solos... but it's A LOT easier to get a Blissey than it is to take on a Gigantamax battle for Snorlax.
So yeah; Gigantamax Snorlax is good, but ultimately outclassed in the role that it desperately wants to perform.
Dynamax Roles
Its neutral damage output isn't the worst, and it can at least put a dent in things, but it's not enough to really make Gigantamax Snorlax great. Honestly, its best offensive utility is as an all-in-one option for some lower level Max Battle solos.
Blissey's middling defense without quite reaching its titanic HP stat means that Gigantamax Snorlax can tank, but it's not OUTSTANDING at the job. Its low Defense also means it doesn't get a HUGE benefit from the flat-HP buffering effects of Max Guard.
One of the highest HP stats in the game makes Gigantamax Snorlax a GREAT healer.... but, say it with me: IT'S NO BLISSEY!
Seriously; the Healer meta is largely solved for Max Battles, meaning Pokemon like Snorlax will forever be in the shadow of the giant HP egg.
First priority: unlock Max Spirit... on Blissey.
Kidding aside, Max Spirit is probably the best way to go, followed by Max Guard for a bit of redirection/protection, and G-Max Replenish if you want the opportunity to leave some dents.

- Lick is the key ingredient to Gigantamax Snorlax. The fact that it quickly generates energy due to how frequently it comes out means that Gigantamax Snorlax will be able to support its team with Max Guard and Max Spirit extremely well.
