The blazing pseudo-Dragon itself, Gigantamax Charizard has one of the safest positions among the three Gigantamax Kanto starters. It battles for the crown of Fire Type Gigantmax Pokemon with Gigantamax Cinderace thanks in part to the latter's higher Attack stat, but Gigantamax Charizard is still objecevitely great. While it's a BIT weaker than Gigantamax Cinderace, as stated, most other Fire Types using Max Flare would have to have 287 Attack in order to surpass Gigantamax Charizard's Max Move damage output, so don't worry about its damage output. Gigantamax Charizard also has the advantage of being a stronger pick than Gigantamax Cinderace in select high-level Max Battles in terms of a complete kit. If your team's tank bites it, then Gigantamax Cinderace relies heavily on having someone else using Max Guard to redirect attacks to keep it alive, even with resistances. Meanwhile, Gigantamax Charizard can actually survive a fairly long time in high-level Max Battles when its Flying sub-typing comes into play, like against Grass or Ground Type moves.
Another nice thing about raising a Gigantamax Charizard? It can pull double-duty as Mega Charizard Y or Mega Charizard X in normal raids, giving it additional value when raised.... except for the whole Dragon Breath issue that we'll talk about below.
Dynamax Roles
While a bit weaker than Gigantamax Cinderace, Gigantamax Charizard will pretty much ensure all of the same wins with G-Max Wildfire. So if you prefer Charizard to Cinderace, then this is a fine investment.
Charizard's typing means that it CAN perform as a defender against select types, as already stated. Just watch out for coverage!

Max out G-Max Wildfire, then possibly invest a bit in Max Guard if you're inclined to use Gigantamax Charizard for a type-dependent defender or solos, but be careful when using it in many scenarios as Max Guard redirects attacks towards Gigantamax Charizard, which is frequently not a good thing.

- Dragon Breath* still results in G-Max Wildfire despite its typing, and it comes out faster than any of Gigantamax Charizard's other moves, so it's generally the best option.... but the problem is that it pretty much pigeon-holes a Gigantamax Charizard into becoming Mega Charizard X instead of the vastly superior Mega Charizard Y outside of Max Battles. Still, Gigantamax Charizard genuinely wants to have Dragon Breath in case your tank drops and it's sitting on the field exposed, as getting to the next Dynamax is extremely important, so it's a worthy sacrifice to make.
